Aptly named Stay Golden due to the apple varieties used to produce it: Goldrush, Golden Russet, Grimes Golden.

Those variety names might not sound very familiar, but that's because they are all Heirloom apples. Many heirlooms were great for cider production, however, they are less desirable for eating and storage which lead to their decline in commercial production and elimination from grocery shelves.
